i don't think there is any "best brand" of honeycomb plates(jigs). A lot of sources seem to be around now. Mine came from a Florida jewelry supply house, because at the time, they had what I wanted for less than $10. As for size, if you get one roughly 5"x7" it'll be big enough to build both 1/32 & 1/24 scale. If you'll only be building 1/32, you can get by with something smaller. In any case, be sure to read the above thread on the honeycomb jigs. It has lots of good information. For a Dremel, I suggest a corded model. For me, they last longer than any battery powered models have. But I will admit to not buying either type in the last 10 years. For solder, get some rosin core 60/40. If you have a Radio Shack store in your area, their solders have always been good. If you'll be working at all with piano wire or other steel parts, buy some acid flux. If you'll only be working with brass, a can of paste flux will fit your needs. These tips should help you get started, but if you have other questions, don't hesitate to ask them. This site has a group of very good chassis builders. Have fun as you build! :)
