First off the track looks amazing!
At some point you might consider going to a crash and burn format or a modified crash and burn format. Some do a lot of shorter races and if your car leaves the slot, than your out for the rest of the race. You can have a point system for each race and then total up all the points for the final results. Another way to do it is modified crash and burn that gives each driver a certain number of deslots until they are out of the race. You can use playing cars or poker chips that can be turned in each time for a deslot. When you run out, your out of the race. This kind of racing may have a learning curve with the drivers but in the end, the racing will have a really nice flow to it without having to start and stop the race all the time.
I have also seen self marshalling work as well. If your car leaves the slot, then you have to go and put it back on the track yourself. With wireless controllers it can be done fairly easy as long as everyone has access around the track. The only time the race would be stopped is if a car is blocking one of the lanes, otherwise you keep racing. Generally, the driving gets better since most get tired of having to get the car plus it costs you a lot of time in the race which makes you think twice about driving too aggressively.
In the end, the racing should have a nice flow and the less track calls the better since it allows each driver to get in a rhythm.
