More Food Stuff

I make a Mexican style pasta dish that I just can't stop eating.

1 LB of your favorite pasta
1 24 Oz. jar of Pace picante sauce medium heat (I tried hot one time. could hardly eat it)
2 cans Ro-Tel tomatoes original kind (drained)
1lb chorizo or hamburger, or whatever meat you prefer browned and set aside
1 bunch of fresh cilantro
1 pkg of Mexican style cheese or queso fresco, if you can get it.
3-4 limes
salt and pepper
2-3 avacados (optional)

Cook the pasta
in another pan put the Pace picante sauce, Ro-Tel tomatoes, and half of the chopped cilantro, and the browned meat, add juice of one lime.
Let simmer until heated through. Add to the cooked and drained pasta. Coarsely chop the remaining cilantro, slice the avacados. To plate put the prepared pasta mixture on the plate, sprinkle with cilantro, add avacado slices 3-4 add cheese, salt and pepper to taste. squeeze lime juice over the top. Eat and enjoy. :D

You need to try it Harry. With me it's like I can't eat enough. I usually do 2-3 servings, no wonder I'm chunky. :laughing-rolling:

With very small alterations, that is old-fashioned Slumgullion, a country cookin' dish I first had in Mississippi when I was a boy. My mother says she had it many times during the Depression as a young girl. I looked it up once, and it actually comes from Gypsy subculture (the name), but is served all over the world in one way or another, and is known by hundreds of other names as well as Slumgullion, as it is known in the Deep South.

My dad used to make slumgullion, and it was very good. Seems sometimes the simpler the dish the better. :D
