I get a lot of requests for this recipe, too, so I'm jumping the gun and posting it. There's no season for this, its always good, all the time. For those of you who remember Pancho's Mexican Restaurant in West Memphis, Arkansas, this is the cheese dip for tortillas that was served while you waited for food. It took me years to figure it out, including looking in their dumpster at the cans they threw out. Yes, I know... I was younger then.

1 pound ordinary American cheese
2 tablespoons ground Cumin
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
1 can Rotel original tomatoes and chili peppers
1/4 cup hot water

Put all this stuff in a microwave dish with a cover, nuke it on high for 3 minutes, stir it thoroughly and nuke it for 2 minutes on high, stir again and serve.

I put it on top of enchiladas, tamales, nachos, chili, all kinds of stuff. The "Restaurant Style" Tostitos are the best copy of Pancho's chips to dip in this, but heck, Ruffles and Fritos are good too.

You're certainly welcome. The Panco's Cantinas in Austin and San Angelo are one chain, the Pancho's Restaurants in El Paso, Dallas/Ft Worth and around Houston are different. While I was in Waco, I drove around a lot, learning as much as I could about the food. The Pancho's in West Memphis goes back to when West Memphis was a truck stop and a dog track with a town beside them. The half dozen Pancho's in Memphis and West Tennessee came from the one in West Memphis.

Hogan, that wasn't a reputation, that was a promise! They also owned one in a seedy section of old town, called the Lamar Drive-in, which was situated in such an odd spot that although it was small by comparison to the other drive ins, it showed all R and X movies, and couldn't be seen from anywhere in the neighborhood. It was the only place to see some of the most famous X rated European movies of the 20th Century, like I Am Curious (blue), really hardcore artsy stuff, at this funky, urine soaked, old fashioned drive in, with a concession stand that was only open before the movies started. After the movie began, it was deserted. For a while, there was a strange mix of horny teenagers, college folks, and art film officianados that would park in that drive in with some of the nastiest looking old men you ever saw. Finally, the regular theaters in Memphis grew to adulthood and showed movies regardless of pointless ratings by ignorant morons. The Lamar was dead in weeks.

I make a buffalo chicken cheese dip that is very taste

I boil a pound of chicken and shred it, soften a pound of cream cheese and a half cup of blue cheese salad dressing
mix in all your stuff salt and pepper and as much Franks Buffalo sauce as you dare

toss in the oven for 20-30 min at 350 and just before you remove it dump on a half pound of cheddar, best served with scoops
heck I like it on bread
