I get a lot of requests for this recipe, too, so I'm jumping the gun and posting it. There's no season for this, its always good, all the time. For those of you who remember Pancho's Mexican Restaurant in West Memphis, Arkansas, this is the cheese dip for tortillas that was served while you waited for food. It took me years to figure it out, including looking in their dumpster at the cans they threw out. Yes, I know... I was younger then.
1 pound ordinary American cheese
2 tablespoons ground Cumin
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
1 can Rotel original tomatoes and chili peppers
1/4 cup hot water
Put all this stuff in a microwave dish with a cover, nuke it on high for 3 minutes, stir it thoroughly and nuke it for 2 minutes on high, stir again and serve.
I put it on top of enchiladas, tamales, nachos, chili, all kinds of stuff. The "Restaurant Style" Tostitos are the best copy of Pancho's chips to dip in this, but heck, Ruffles and Fritos are good too.
