Texas Chicken Fried Steak (its a mess, but very much worth it)

3 pounds cube steak (tenderized round steak that's been extra tenderized- run it through 4 times)
1-1⁄2 cup whole milk, plus up to 2 cups for gravy
3 whole large eggs
3 cups all-purpose flour
salt
1⁄4 teaspoons cayenne pepper
LOTS Of Black Pepper. Lots.
Paul Prudhomme's Toasted Onion and Garlic seasoning
canola oil, for frying

Preparation Instructions
Begin with an assembly line of dishes for the meat: milk mixed with egg in one; flour mixed with
spices in one; meat in one; then have one clean plate at the end to receive the breaded meat.
Work one piece of meat at a time. Season both sides with salt and pepper, then dip in the milk/egg
mixture. Next, place the meat on the plate of seasoned flour. Turn to coat thoroughly. Place the meat
back into the milk/egg mixture, turning to coat. Place back in the flour and turn to coat.
(So: wet mixture/dry mixture/wet mixture/dry mixture.) Place breaded meat on the clean plate, then
repeat with remaining meat.
Heat oil in a large skillet over medium heat. Drop in a few sprinkles of flour to make sure it’s
sufficiently hot. Cook meat, three pieces at a time, until edges start to look golden brown; around 2 to 2
1/2 minutes each side.
Remove to a paper towel-lined plate and keep warm. Repeat until all meat is cooked.
GRAVY:
After all meat is fried, pour off the grease into a heatproof bowl. Without cleaning the pan, return it to
the stove over medium-low heat. Add 1/4 cup grease back to the pan. Allow grease to heat up.
Sprinkle 1/3 cup flour evenly over the grease. Using a whisk, mix flour with grease, creating a golden-
brown paste. Keep cooking until it reaches a deep golden brown color. If paste seems more oily than
pasty, sprinkle in another tablespoon of flour and whisk.
Whisking constantly, pour in milk. Cook to thicken the gravy. Be prepared to add more milk if it
becomes overly thick. Add salt and pepper and cook for 5 to 10 minutes, until gravy is smooth and
thick. Be sure to taste to make sure gravy is sufficiently seasoned.

Serve it with mashed potatoes, drown it all in gravy. Drink beer and await the praise.

Ok... Here's one from my stockpile.

Slacker Sunday Brunch Beans (serves 2 with leftovers or seconds)

1 medium onion, finely diced
1/4 red or green capsicum/bell pepper, finely diced
1 clove garlic, crushed
Smoked slab bacon (2 or 3 thick slices) - the smokier the better, cut in lardons or dice
1 can borlotti beans (or similar white beans)
1 can diced tomatoes
Red wine vinegar
Good extra virgin olive oil
Fresh basil

A splash of olive oil in the frying pan to start things off.Over medium to low heat render fat from bacon (don't drain it). Add onions and garlic and sauté until onions start to cook. Add capsicum and continue until soften slightly. Add a good splash of red wine vinegar and a dash of extra virgin olive oil. Add canned tomatoes, salt and pepper to taste and a little sugar if desired. Simmer a couple of minutes before added rinsed and drained beans, and fresh basil. Simmer just long enough to warm beans.

Serve on toasted sour dough. Top with freshly grated parmesan and drizzle with good extra virgin olive oil.

These beans have been known to appear on Bathurst 1000 day to prepare body for the first beer at race start. ;)

We call them cranberry beans, and they can be bought here in dried bean form. They cook up looking like what we call pintos, but the flavor is more like some kind of nutmeat.

This is a site I get beans and nuts from. They're great to deal with.

1 pound chicken
2 pounds cream cheese
1 bottle franks buffalo sauce
1 pound sharp cheddar
1\4 cup ranch dressing
1\4 cup blue cheese
onion chopped
garlic chopped
stalk of celery

I boil the chicken till its just done let it cool and tear it apart mix in half a bottle of Franks, soften the cream cheese and mix everything but the cheddar pour in the other half of Franks, place in a pan and top with the cheddar bake at 350 for 25-30 min with foil
covering pan, pull foil off to get cheese to darken, serve with celery, crackers or chips, or just eat it with your fingers
