The old steel coffins would be great grills. I never thought of it, but seriously, it really would. I may have to consult Craig's List. You could do 10 big whole pork shoulders on there, and the lids would roll up the smoke perfectly. All you would have to do is put in a smoke stack that opens all the way down to grill level, and the captured smoke would be dense and fine for any kind of meat or fish. If you lived close enough to get them, whole halibut slabs and salmon would be incredibly good that way.
