That big fire that close to a steak that thick don't look good. Need to let that fire burn down a bit and cook those steaks over lower heat for a long time!!! Of course they might sear the outside, then pull them off while the heat dies down and then put them back on.
Looked to me like there are two full beef ribs on there. Pretty sure those are bone in rib steaks. I would think maybe this guy had some beef butchered and they cut the ribs with the bone in on a band saw.
